Equipment

  • Blender
  • mixing bowl
  • Springform Pan
  • electric mixer
  • Whisk

Method

Preparation Steps
  1. Begin by peeling ripe mangoes and chopping them into chunks. Place these chunks in a blender and blend until you achieve a smooth consistency. You should yield approximately 1 ½ cups of mango puree. Set aside ¼ cup of this puree to use as a topping later, while the rest will be mixed into the filling for your No Bake Mango Cheesecake.
  2. In a large mixing bowl, combine graham cracker crumbs, light brown sugar, melted unsalted butter, and a pinch of kosher salt. Mix them well until everything is evenly coated and slightly damp. Press this mixture firmly into the bottom of a springform pan, creating an even layer. Once done, place the pan in the freezer for about 15-20 minutes to set while you prepare the filling.
  3. Take the softened cream cheese and place it in a mixing bowl. Beat it with an electric mixer on medium speed until creamy and smooth, which should take about 2-3 minutes. Gradually add in the sweetened condensed milk, fresh lime juice, and vanilla extract, mixing well after each addition until fully combined and velvety smooth.
  4. In a small bowl, combine cold water with unflavored gelatin and allow it to sit for about 5 minutes to bloom. After blooming, gently heat the mixture in a microwave for about 10-15 seconds or until just melted. Be careful not to overheat, as it may diminish the gelatin’s effectiveness. Mix this gelatin into the reserved ¼ cup of mango puree until smooth.
  5. Slowly pour the gelatin-mango mixture into the cheesecake batter. Using a spatula, gently fold the gelatin into the cream cheese mixture until everything is completely integrated and there are no visible streaks. The filling should appear creamy and uniform, ready to be poured into the crust for your No Bake Mango Cheesecake.
  6. In a separate mixing bowl, pour in the heavy whipping cream and add powdered sugar. Beat this mixture on medium-high speed with a whisk attachment until you achieve stiff peaks, which should take about 3-5 minutes. Be cautious not to overwhip, as this can turn the cream grainy. Gently fold the whipped cream into the cheesecake filling, ensuring a light and airy texture.
  7. Once the crust has set, carefully pour the prepared cheesecake mixture into the chilled crust. Use a spatula to smooth the top evenly, ensuring there are no air pockets.
  8. Using the reserved mango puree, drizzle or swirl it across the top of the cheesecake. For an aesthetically pleasing effect, take a knife and gently swirl the puree into the cheesecake filling.
  9. Cover the cheesecake with plastic wrap and refrigerate for at least 8 hours, or overnight for best results.
