Cooking Instructions
- Prepare the Salmon: If using canned salmon, open, drain thoroughly, and flake the fish. For fresh salmon, cook it in a skillet over medium heat for 5-7 minutes until fully cooked.
- Mix the Wet Ingredients: In a large bowl, combine ½ cup mayonnaise, 1 beaten egg, 1 tablespoon lemon juice, and chopped herbs. Stir together until well blended.
- Combine All Ingredients: Add flaked salmon, 1 cup breadcrumbs, and ¼ cup finely chopped onion to the wet mixture. Season with salt and black pepper, gently folding together.
- Form the Patties: Shape the salmon mixture into small patties approximately 2-3 inches in diameter, pressing lightly to compact.
- Cook the Patties: Heat 2 tablespoons of oil in a skillet over medium heat and cook the patties for 3-4 minutes on each side until golden.
- Drain and Serve: Transfer patties to paper towels to absorb excess oil. Serve warm with lemon juice or dipping sauce.

Notes
Chilling the patties for 15 minutes before cooking helps firm them up, preventing breakage while frying. Fry in batches for best results.
