Step‑by‑Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat for about 1-2 minutes until shimmering.
  2. Season 4 chicken thighs with salt and pepper and cook in the hot skillet for 5-7 minutes on each side until golden-brown and cooked through.
  3. Remove the chicken and set aside. In the same skillet, add 1 cup of long-grain white rice and toast for 1-2 minutes until slightly translucent.
  4. Pour in 2 cups of chicken broth, ½ cup of buffalo sauce, and 1 packet of ranch seasoning mix. Stir well and bring to a gentle simmer.
  5. Return the chicken to the skillet, cover, reduce heat to low, and cook for 20-25 minutes.
  6. Sprinkle 1 cup of shredded cheddar cheese on top, cover, and let it melt for about 5 minutes.
