Step-by-Step Instructions
  1. In a large mixing bowl, whisk together flour, baking powder, and salt. Set aside.
  2. Beat butter and sugar in a stand mixer until light and fluffy.
  3. Mix in egg and vanilla until combined.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. Divide the dough into three portions and color two with red and blue gel food coloring.
  6. Wrap portions in plastic wrap and refrigerate for at least 45 minutes.
  7. Roll the colored dough between parchment paper into 1/4-inch thickness and cut into strips.
  8. Assemble colored strips into a rectangle and refrigerate for an additional 30 minutes.
  9. Roll out uncolored dough to 1/4-inch thickness and cut into circles.
  10. Roll edges of uncolored circles in sprinkles and place them on a baking sheet.
  11. Cut star shapes from colored dough and place them on top of the assembled circles.
  12. Bake cookies at 350°F for 9-10 minutes, then cool on a wire rack.
