Step-by-Step Instructions for Peanut Butter & Jelly Banana Bread
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with butter or non-stick spray.
- In a large mixing bowl, mash 3-4 ripe bananas until smooth. Mix in ½ cup peanut butter, ¾ cup sugar, ⅓ cup melted butter, 1 teaspoon vanilla extract, and 1 egg.
- In a separate bowl, whisk together 1 ½ cups flour, 1 teaspoon baking soda, and ¼ teaspoon salt.
- Gradually fold the dry ingredients into the wet banana mixture until just combined.
- Pour half of the batter into the loaf pan, add dollops of ¼ cup jelly, and swirl it into the batter.
- Add the remaining batter over the jelly, with more dollops of jelly on top and swirl gently.
