- In a medium saucepan, combine pitted and halved fresh cherries with equal mix of granulated sugar and water. Bring to a gentle simmer over low heat, stirring occasionally for about 20 minutes.
- Remove the saucepan from heat and allow the cherry syrup to cool completely at room temperature for 15–20 minutes.
- Fill a tall glass generously with ice cubes. Add 3-4 tablespoons of cooled cherry syrup and 6-7 whole cherries. Squeeze in 2 tablespoons of fresh lime juice and top with sparkling water. Stir gently.
- Garnish with a fresh lime wedge and a skewer with fresh cherries. Serve immediately.
