Extras

  • 1/2 cup Grated Parmesan cheese For mixing and garnish.
  • to taste Salt
  • to taste Black pepper
  • optional Red pepper flakes For heat.

Equipment

  • Large pot
  • Colander
  • large skillet
  • Wooden spoon

Method

Step‑by‑Step Instructions
  1. Bring a large pot of salted water to a rolling boil over high heat. Add your choice of spaghetti or linguine and cook according to package directions until al dente, typically about 8-10 minutes. Once done, reserve 1/2 cup of the starchy pasta water, then drain the pasta in a colander.
  2. In a large skillet, heat a couple of tablespoons of olive oil over medium-high heat. Add minced garlic and sauté for about 30 seconds until aromatic but not browned. Carefully add the large shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Reduce the heat to medium and add the drained pasta to the same skillet. Stir in the fresh basil pesto and grated Parmesan cheese, letting the flavors meld together. If the mixture appears too thick, gradually stir in reserved pasta water to achieve the desired creamy consistency.
  4. Restore the cooked shrimp to the skillet, gently tossing it with the pasta and pesto until everything is evenly coated. Taste your Pesto Shrimp Pasta and adjust seasoning with additional salt, pepper, or even red pepper flakes for a bit of heat if desired.
  5. Immediately plate the pasta, garnishing each serving with extra grated Parmesan and a sprinkle of fresh basil or parsley for a delightful pop of color. Enjoy this vibrant dish right away, relishing the warm and satisfying combination of flavors.
