Step-by-Step Instructions for Scallion Chicken
  1. Begin by placing your boneless, skinless chicken thighs in a mixing bowl. Pour in the soy sauce, dark soy sauce, oyster sauce, black pepper, and corn starch. Mix well and marinate for about 10 minutes at room temperature.
  2. Heat 4 tablespoons of your preferred neutral oil in a non-stick frying pan over medium heat.
  3. Add the marinated chicken thighs to the hot oil and sear for about 5 to 7 minutes, turning occasionally, until golden brown and cooked through.
  4. Once the chicken is browned, mix in the chopped scallions, starting with the white parts. Cook for an additional 2 to 3 minutes.
