  1. Begin by heating 2 tablespoons of olive oil in a large non-stick skillet over medium heat. Add 1 cup of cubed potatoes and sauté them for 5–7 minutes, stirring occasionally until they are lightly browned and tender. Once done, transfer the potatoes to a plate and set them aside to keep warm.
  2. In the same skillet, add 1 pound of lean ground beef, breaking it apart with a spatula. Cook for about 5 minutes, stirring frequently, until the beef is sizzling and any moisture has evaporated.
  3. Next, toss in 3 minced garlic cloves, 1 tablespoon of minced ginger, and 3 chopped spring onions to the skillet with the beef. Stir them together and cook for about 2–3 minutes until fragrant.
  4. Pour in 2 tablespoons of dark soy sauce, mixing thoroughly with the beef and aromatics. Continue to fry for another 10–15 seconds.
  5. Return the sautéed potatoes to the skillet and lower the heat slightly. In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water. Pour this mixture into the skillet, stirring until well combined.
