Step-by-Step Instructions
- Begin by heating 2 tablespoons of olive oil in a large non-stick skillet over medium heat. Add 1 cup of cubed potatoes and sauté them for 5–7 minutes, stirring occasionally until they are lightly browned and tender. Once done, transfer the potatoes to a plate and set them aside to keep warm.
- In the same skillet, add 1 pound of lean ground beef, breaking it apart with a spatula. Cook for about 5 minutes, stirring frequently, until the beef is sizzling and any moisture has evaporated.
- Next, toss in 3 minced garlic cloves, 1 tablespoon of minced ginger, and 3 chopped spring onions to the skillet with the beef. Stir them together and cook for about 2–3 minutes until fragrant.
- Pour in 2 tablespoons of dark soy sauce, mixing thoroughly with the beef and aromatics. Continue to fry for another 10–15 seconds.
- Return the sautéed potatoes to the skillet and lower the heat slightly. In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water. Pour this mixture into the skillet, stirring until well combined.
- Finally, stir in chopped fresh coriander if desired. Plate your Quick Ground Beef Stir Fry hot, ready to be enjoyed.
