Step-by-Step Instructions
  1. Rinse quinoa under cold water, then combine with water and pinch of salt in a saucepan. Bring to a boil, reduce to simmer, cover, and cook for 15 minutes.
  2. Transfer cooled quinoa to a mixing bowl. Add chopped vegetables, beaten egg, and bread crumbs. Mix in spices to taste.
  3. Shape quinoa mixture into small balls or patties, about 1-2 inches wide.
  4. To bake, preheat oven to 400°F (200°C). Bake bites for 20-25 minutes, flipping halfway. To pan-fry, heat olive oil and fry bites for 3-4 minutes each side.
  5. Cool slightly before serving with your choice of dipping sauce.
