  • 1 cup Granulated Sugar Adjust based on sweetness preference
  • 2 tablespoons All-Purpose Flour Use gluten-free flour for gluten-free option
  • 1 teaspoon Vanilla Extract Optional
Topping
  • 1 cup Rolled Oats
  • 1/2 cup Brown Sugar Substitute coconut sugar for healthier option
  • 1 teaspoon Ground Cinnamon Optional but recommended
  • 1/2 cup Unsalted Butter Cold and cubed, can use vegan butter

Method
 

Instructions
  1. Preheat Your Oven to 375°F (190°C).
  2. Prepare the Rhubarb Filling by combining chopped rhubarb, sugar, flour, and vanilla in a bowl.
  3. Transfer the filling to a greased 8x8-inch baking dish, spreading it evenly.
  4. Make the Oat Topping by mixing oats, brown sugar, flour, cinnamon, and salt and blending in the cold butter.
  5. Add the Crunchy Topping by sprinkling it evenly over the rhubarb filling.
  6. Bake the Crisp in the preheated oven for 35-40 minutes until golden brown.
  7. Cool for 15-20 minutes before serving warm, optionally with vanilla ice cream.
