- Preheat your oven to 175 °C (350 °F).
- Halve the peaches and remove the pits, then slice the strawberries in half.
- Place the halved peaches and strawberries on a baking tray lined with baking paper. Roast for about 25 minutes.
- Allow the fruit to cool for about 10 minutes.
- Peel the skins off the roasted peaches and place the flesh into a blender with some apple juice, blending until smooth.
- In a separate blender, blend the roasted strawberries until smooth.
- Take six glasses and fill them with crushed ice. Divide the strawberry puree among the glasses.
- Pour the peach and apple juice mixture over the ice and strawberry puree, then top with sparkling water.
- Serve immediately, garnishing with mint or extra fruit slices if desired.
