Method
 

Step-by-Step Instructions
  1. Preheat your oven to 175 °C (350 °F).
  2. Halve the peaches and remove the pits, then slice the strawberries in half.
  3. Place the halved peaches and strawberries on a baking tray lined with baking paper. Roast for about 25 minutes.
  4. Allow the fruit to cool for about 10 minutes.
  5. Peel the skins off the roasted peaches and place the flesh into a blender with some apple juice, blending until smooth.
  6. In a separate blender, blend the roasted strawberries until smooth.
  7. Take six glasses and fill them with crushed ice. Divide the strawberry puree among the glasses.
  8. Pour the peach and apple juice mixture over the ice and strawberry puree, then top with sparkling water.
  9. Serve immediately, garnishing with mint or extra fruit slices if desired.
