Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook according to package instructions (10-12 minutes). Drain well without rinsing.
  2. In a large skillet, heat over medium heat. Add ground beef or turkey, cooking for 5-7 minutes, breaking apart until browned. Drain excess grease.
  3. To the browned meat, add undrained Rotel tomatoes, heavy cream, taco seasoning, and garlic powder. Stir and simmer for about 5 minutes.
  4. Add drained pasta to the skillet with the meat and sauce. Stir to coat the pasta evenly.
  5. Reduce heat to low and stir in cheddar cheese until melted and combined.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Transfer to serving bowls and garnish with fresh cilantro or parsley. Serve immediately.
