- Preheat your grill or skillet over medium-high heat for about 5 minutes.
- In a small bowl, combine chili powder, cumin, garlic powder, salt, and pepper. Rub the mixture evenly over the chicken breasts.
- Drizzle olive oil on the preheated surface and cook the chicken for 6 to 7 minutes per side until cooked through.
- Prepare the brown rice according to package instructions, adding 2 cups of water for every 1 cup of rice.
- Layer the cooked brown rice in a large serving bowl, then add black beans, cheddar cheese, and fresh veggies around it.
