Preparation
  1. Prepare the Marinade: In a small bowl, whisk together teriyaki sauce, Dijon mustard, minced garlic, and optional sesame seeds until fully combined.
  2. Marinate the Chicken: Place cubed chicken breasts in a zip-top bag, pour the marinade over, seal, and refrigerate for at least 2 hours.
  3. Soak Skewers: If using wood skewers, soak them in water for at least 30 minutes.
  4. Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C).
  5. Assemble the Kabobs: Thread chicken, pineapple, bell pepper, mushrooms, and onion onto soaked skewers.
  6. Grill the Kabobs: Grill the kabobs for 11-14 minutes, turning every 3 minutes until chicken reaches an internal temperature of 165°F.
  7. Rest and Garnish: Remove kabobs from the grill and rest for about 5 minutes; garnish with freshly sliced green onions.
