Ingredients
  

For the Chicken
  • 4 pieces Chicken Thighs bone-in for more flavor
For the Vegetables
  • 2 medium Zucchini or yellow squash
  • 1 medium Red Onion or shallots
  • 1 cup Cherry Tomatoes any small tomato variety
  • 1/2 cup Kalamata Olives or green olives
For the Marinade
  • 1/4 cup Extra Virgin Olive Oil can substitute with avocado oil
  • 4 cloves Garlic or garlic powder
  • 2 tablespoons Lemon Juice or lime juice
  • 1 teaspoon Dried Oregano or fresh herbs
  • 1 teaspoon Dried Basil or marjoram
  • 1 teaspoon Dried Thyme or herb mix
  • 1 teaspoon Kosher Salt or sea salt
  • 1/2 teaspoon Black Pepper optional
  • 1/2 teaspoon Red Pepper Flakes optional
For the Toppings
  • 1/2 cup Feta Cheese or goat cheese
  • 1/4 cup Fresh Parsley or fresh basil
  • 1 lemon Lemon Wedges for serving

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a sheet pan with parchment paper.
  2. In a large mixing bowl, whisk together the olive oil, minced garlic, lemon juice, oregano, basil, and thyme.
  3. Pat the chicken thighs dry and season with salt and black pepper, then coat in the marinade.
  4. Wash and slice the zucchini and chop the red onion, then toss in the remaining marinade.
  5. Arrange marinated chicken on one side of the sheet pan and veggies on the other.
  6. Toss cherry tomatoes and Kalamata olives on the pan, then roast for 25 to 30 minutes.
  7. Once cooked, sprinkle feta cheese on top and garnish with parsley.
  8. Serve immediately with lemon wedges.
