- Preheat your oven to 425°F (220°C) and line a sheet pan with parchment paper.
- In a large mixing bowl, whisk together the olive oil, minced garlic, lemon juice, oregano, basil, and thyme.
- Pat the chicken thighs dry and season with salt and black pepper, then coat in the marinade.
- Wash and slice the zucchini and chop the red onion, then toss in the remaining marinade.
- Arrange marinated chicken on one side of the sheet pan and veggies on the other.
- Toss cherry tomatoes and Kalamata olives on the pan, then roast for 25 to 30 minutes.
