Ingredients
  

Steak Marinade
  • 1 pound Skirt Steak Can substitute with flank steak or ribeye.
  • 1 cup Beer Use any light lager or ale.
  • 1/4 cup Lime Juice Freshly squeezed is best.
  • 2 tablespoons Olive Oil Vegetable oil can be used as a substitute.
Taco Filling
  • 4 Spring Onions Green onions can be used as a substitute.
  • to taste Salt
  • to taste Pepper
Assembly
  • 8 Corn Tortillas Use store-bought or homemade.
  • 1/2 cup Fresh Cilantro For garnish.
  • 2 Lime Wedges For squeezing on tacos.

Method
 

Preparation
  1. Tenderize the skirt steak with a meat mallet and mix beer, lime juice, and olive oil in a bowl. Coat the steak with the marinade, cover, and refrigerate for at least 30 minutes.
  2. Slice the spring onions lengthwise, drizzle with olive oil, and season with salt and pepper.
Cooking
  1. Preheat your grill to medium heat. Remove the steak from the marinade, discard excess liquid, and season. Grill the steak and onions for 2-4 minutes per side.
  2. Let the steak rest for a few minutes before slicing it diagonally. Warm the corn tortillas.
Serving
  1. Assemble the tacos by filling each tortilla with steak and grilled onions. Garnish with cilantro and lime wedges.
