Ingredients
  

For the Pasta
  • 8 ounces Spaghetti Can be swapped for any long noodle
For the Sauce
  • 2 tablespoons Olive Oil Vegetable oil can work just as well
  • 1 small Onion, chopped Can substitute with shallots for a milder flavor
  • 1 medium Green Pepper, chopped Red or yellow bell peppers are also good
  • 1 pound Shredded Cooked Pork Can use leftover pulled pork or rotisserie chicken
  • 1.5 to 2 cups Barbecue Sauce Memphis style preferred
  • 24 ounces Marinara Sauce Both store-bought and homemade work

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil over high heat. Add the spaghetti and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large saucepot, heat olive oil over medium heat. Add chopped onion and green pepper, and cook for 5 to 7 minutes until softened.
  3. Stir in the shredded cooked pork, then add the barbecue sauce and marinara sauce. Mix well and let simmer for about 5 minutes.
  4. Add the cooked spaghetti to the saucepot and toss to coat with the sauce.
  5. Remove from heat and serve hot, optionally with buttered toast or coleslaw.

Notes

Ensure pork is heated through before mixing. Store leftovers in an airtight container for up to 4 days. Do not freeze mixed spaghetti and sauce.
