Method
 

Step-by-Step Instructions
  1. Preheat the skillet over medium-high heat for about 3-5 minutes until hot.
  2. Dice chicken and sweet potatoes into 1-inch cubes and set aside.
  3. In a bowl, toss chicken and sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper.
  4. Sear chicken in the skillet for 5-6 minutes until golden brown, then set aside.
  5. Sauté sweet potatoes and red onion in the same skillet for about 8-10 minutes until tender.
  6. Return chicken to skillet, add garlic, and cook for an additional 3-4 minutes.
  7. Remove from heat and finish with lemon juice before serving.
