- Cut boneless, skinless chicken breasts or thighs into bite-sized chunks. Pat them dry, then season with salt, pepper, and Italian seasoning.
- In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add seasoned chicken pieces in a single layer and sear for 3–4 minutes on each side until golden brown.
- Lower to medium heat and add 2 tablespoons of butter to the skillet. Stir in minced garlic and sauté for 30 seconds until fragrant.
- Return the cooked chicken pieces to the skillet and toss in the garlic butter sauce until well coated, allowing to simmer gently for 1–2 minutes.
- Garnish with freshly chopped parsley and serve warm over pasta, rice, or as appetizers.
