Preparation Steps
- Start by slicing the chicken breast into strips and chopping the bell peppers and onion into thin slices. Mince the garlic cloves finely.
- Pour half of the salsa into the bottom of your crockpot. Layer half of the sliced bell peppers and half of the onions over the salsa. Sprinkle the minced garlic evenly across this layer.
- Place the seasoned chicken strips directly on top of the vegetable layer. Sprinkle the fajita seasoning and chili powder over the chicken.
- Add the remaining bell peppers and onions on top of the chicken. Pour the rest of the salsa over this layer and squeeze lime juice over everything.
- Cover the crockpot and cook on low for 6–8 hours or on high for 3–4 hours.
- Once cooked, shred the chicken in the crockpot using two forks and mix everything together.
