For the Savory Topping
  • 1 pound Ground Beef Lean beef or turkey can be used.
  • 1 medium Diced Onion Shallots can be substituted.
  • 2 cloves Minced Garlic Use roasted garlic for sweetness if desired.
  • 1 teaspoon Chili Powder Optional but recommended.
  • 1 teaspoon Cumin Omit if not to taste.

For the Roasted Garlic Dip

Preparation Steps
  1. Preheat your air fryer to 400°F (200°C).
  2. Wash and scrub the russet potatoes thoroughly. Cut them into evenly sized wedges, about 1-inch thick.
  3. Toss the potato wedges with olive oil, garlic powder, paprika, kosher salt, and ground black pepper in a large mixing bowl.
  4. Place the seasoned potato wedges in a single layer in the air fryer basket. Cook for 20 to 25 minutes, shaking halfway through.
  5. Heat a skillet over medium heat. Add diced onion and sauté for 3-4 minutes until translucent. Add minced garlic, cooking for another minute.
  6. In the same skillet, add ground beef and break it apart while stirring. Sprinkle in chili powder, cumin, and kosher salt. Cook for 8 to 10 minutes.
  7. Remove cooked potato wedges from the air fryer and transfer to a serving platter. Spoon the savory ground beef mixture over the wedges.
  8. To make the roasted garlic dip, squeeze softened garlic into a mixing bowl. Combine with sour cream, mayonnaise, lemon juice, red wine vinegar, smoked paprika, salt, and pepper. Mix until smooth.
  9. Serve the assembled dish hot with the roasted garlic dip. Garnish with freshly chopped parsley if desired.
