Preparation Steps
- Preheat your air fryer to 400°F (200°C).
- Wash and scrub the russet potatoes thoroughly. Cut them into evenly sized wedges, about 1-inch thick.
- Toss the potato wedges with olive oil, garlic powder, paprika, kosher salt, and ground black pepper in a large mixing bowl.
- Place the seasoned potato wedges in a single layer in the air fryer basket. Cook for 20 to 25 minutes, shaking halfway through.
- Heat a skillet over medium heat. Add diced onion and sauté for 3-4 minutes until translucent. Add minced garlic, cooking for another minute.
- In the same skillet, add ground beef and break it apart while stirring. Sprinkle in chili powder, cumin, and kosher salt. Cook for 8 to 10 minutes.
- Remove cooked potato wedges from the air fryer and transfer to a serving platter. Spoon the savory ground beef mixture over the wedges.
- To make the roasted garlic dip, squeeze softened garlic into a mixing bowl. Combine with sour cream, mayonnaise, lemon juice, red wine vinegar, smoked paprika, salt, and pepper. Mix until smooth.
- Serve the assembled dish hot with the roasted garlic dip. Garnish with freshly chopped parsley if desired.
