  • 1/4 cup Mayo Contributes to creaminess.

  • 1 teaspoon Kosher salt Ideal for seasoning.
  • 1 teaspoon Sugar Can be omitted if desired.
For the Filling
  • 2 cups Cooked rice Use any preferred variety.
  • 1 can Pinto beans Can substitute with black beans.
  • 4 large Burrito-size flour tortillas Corn tortillas can be used for gluten-free.
  • 1 cup Shredded Pepper Jack cheese Feel free to use any melty cheese.

Method
 

Cooking instructions
  1. Preheat your oven to 375°F (190°C). Season chicken breasts with cumin, taco seasoning, salt, and pepper. Place in a baking dish and bake for 35 minutes, or until cooked through.
  2. While chicken cools, prepare the creamy dressing by blending salsa verde, ranch mix, sour cream, mayo, garlic, lime juice, salt, and sugar until smooth.
  3. Lay tortillas out, and fill each with shredded chicken, rice, and pinto beans. Roll tightly.
  4. Grease a baking dish and place burritos seam-side down. Drizzle with dressing and top with cheese. Bake at 375°F for 15-20 minutes until heated through.
  5. Let burritos rest for a few minutes before serving, then enjoy with Pico de Gallo.
