Ingredients
  

For the Filling
  • 1 block Firm Tofu well-drained and crumbled
  • 2 cups Chopped Spinach fresh or thawed
  • 1 cup Vegan Sausage Crumbles or tempeh/mushrooms
  • 1 medium Diced Onion yellow or red
  • 1/4 cup Nutritional Yeast optional
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • to taste Salt
  • to taste Pepper
For Sautéing
  • 1-2 tablespoons Olive Oil for sautéing vegetables
For the Crust
  • 1 pie crust Vegan Pie Crust store-bought or homemade
  • 1 cup All-purpose flour can substitute with gluten-free flour
  • 1/2 teaspoon Salt just a pinch
  • 1/3 cup Cold Vegan Butter keep it chilled
  • cold water Ice Water to bind the dough

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and prepare a greased pie dish.
  2. In a skillet, heat olive oil over medium heat. Sauté diced onion for about 3-4 minutes until translucent, then add spinach and sauté for another 2-3 minutes.
  3. In a mixing bowl, crumble the tofu, then add the sautéed onion, spinach, sausage crumbles, nutritional yeast, garlic powder, salt, and pepper. Mix well.
  4. Spoon the filling into the prepared pie crust and spread it evenly.
  5. Bake for 25-30 minutes until the filling is set and the top is golden brown.
  6. Remove from the oven and let cool for about 10 minutes before slicing. Serve warm.
