Ingredients
  

For the Kebab
  • 1 lb Ground Beef Use 80/20 or 85/15 for juiciness.
  • 1 Onion Grated and squeezed to remove excess liquid.
  • 3 cloves Garlic Minced for even distribution.
  • 1 tsp Paprika Smoked paprika can be used for a smoky touch.
  • 1 tsp Oregano Dried or fresh is suitable.
  • 1 tsp Salt Adjust based on preference.
  • 1 tsp Black Pepper Use freshly cracked for best flavor.
  • 3 large Tomatoes Can substitute with bell peppers if desired.
  • 2 Long Green Peppers Turkish sivri or banana peppers are ideal.
For the Garlic Sauce
  • 1/2 cup Mayonnaise Switch to Greek yogurt for tanginess.
  • 1/3 cup Sour Cream Plain yogurt can be used as a substitute.
  • 3-4 cloves Garlic Similar to fresh garlic in the meat mixture.
  • 1/4 tsp Black Pepper Adds a nice kick.
  • Salt Adjust as needed.
  • 2-4 tbsp Water Thin to your preferred consistency.
For the Topping
  • 1 Red Onion Thinly sliced.
  • 1 tbsp Sumac Substitute with lemon zest if desired.
  • 1 tbsp Parsley Cilantro can be used for a different taste.
  • 2 tbsp Olive Oil Dresses the sumac onions.
  • 1 Lemon Juice Fresh lemon juice is the best choice.

Method
 

Cooking Instructions
  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl or food processor, combine grated onion, minced garlic, ground beef, paprika, oregano, salt, and black pepper. Mix until tacky, about 2-3 minutes.
  3. Place the meat mixture between two sheets of parchment paper and press into a thin rectangle. Roll it tightly into a log shape and twist the edges to seal.
  4. Bake the wrapped kebab log on a lined baking tray alongside halved tomatoes and long green peppers for 30 minutes until cooked through.
  5. Once baked, unwrap the parchment paper, let rest for a few minutes, then slice into strips.
  6. Spread kebab pieces evenly on the tray, set the oven to broil and broil for 3-5 minutes until crispy.
  7. Whisk together mayonnaise, sour cream, minced garlic, black pepper, salt, and water for the garlic sauce. In another bowl, combine sliced red onions with sumac, parsley, olive oil, lemon juice, and salt to marinate.
  8. Serve in warm flatbreads or salads, layering kebab pieces, drizzle with garlic sauce, and top with marinated onions.
