Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan with parchment paper.
  2. Grate the zucchini, place it in a kitchen towel over a strainer, and let sit for 10 minutes to drain excess moisture.
  3. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In another bowl, mix together the buttermilk, melted butter, and beaten egg until well combined.
  5. Combine the wet and dry ingredients gently until just mixed.
  6. Fold in the drained zucchini, cheddar cheese, and jalapeños carefully.
  7. Transfer the batter to the prepared loaf pan and bake for 55-60 minutes or until a toothpick comes out clean.
  8. After baking, let the bread cool in the pan for 10 minutes before transferring to a wire rack.
