  • 1 cup Panko-style Breadcrumbs Gluten-free option available
  • 2 large Eggs Fresh
  • 1/2 cup Parmesan Cheese Grated, or use nutritional yeast for dairy-free
  • 1/2 cup Mozzarella Cheese Grated, or use vegan cheese for dairy-free
  • 2 cloves Garlic Minced
  • to taste Salt
  • to taste Pepper
  • 1 cup Canola Oil For frying; olive oil can be substituted

Method
 

Preparation Steps
  1. Grate the zucchini and drain it using a mesh bag or cheesecloth to remove excess moisture.
  2. In a mixing bowl, combine the drained zucchini, panko breadcrumbs, eggs, Parmesan, mozzarella, and garlic.
  3. Season the mixture with salt and pepper; mix thoroughly.
  4. Let the mixture rest for about 5 minutes.
  5. Preheat a skillet over medium heat and add oil until shimmering.
  6. Form fritters with a scoop and carefully place them into the skillet; do not overcrowd.
  7. Cook the fritters for 4-6 minutes until golden-brown, flipping once.
  8. Transfer cooked fritters to a paper towel-lined plate to absorb excess oil.
