Directions
  1. Lightly grease the interior of your slow cooker with cooking spray or a splash of olive oil.
  2. Arrange the chicken breasts or thighs in a single layer at the bottom of the slow cooker.
  3. In a medium bowl, whisk together honey, Dijon mustard, yellow mustard, minced garlic, olive oil, chicken broth, salt, and pepper until smooth.
  4. Pour the sauce evenly over the chicken, making sure each piece is coated.
  5. Cook on LOW for 6-7 hours or on HIGH for 3-4 hours until fork-tender.
  6. If desired, thicken the sauce by mixing cornstarch with cold water and whisking it into the remaining sauce.
  7. Return the chicken to the slow cooker, spoon sauce over it, and let it sit for a few minutes.
  8. Garnish with parsley and serve over rice, mashed potatoes, or your preferred side.
