Directions
- Lightly grease the interior of your slow cooker with cooking spray or a splash of olive oil.
- Arrange the chicken breasts or thighs in a single layer at the bottom of the slow cooker.
- In a medium bowl, whisk together honey, Dijon mustard, yellow mustard, minced garlic, olive oil, chicken broth, salt, and pepper until smooth.
- Pour the sauce evenly over the chicken, making sure each piece is coated.
- Cook on LOW for 6-7 hours or on HIGH for 3-4 hours until fork-tender.
- If desired, thicken the sauce by mixing cornstarch with cold water and whisking it into the remaining sauce.
- Return the chicken to the slow cooker, spoon sauce over it, and let it sit for a few minutes.
- Garnish with parsley and serve over rice, mashed potatoes, or your preferred side.
