Step-by-Step Instructions for Smashburger Quesadillas
  1. Heat a cast-iron skillet or griddle over medium-high heat until hot.
  2. Lightly brush the outside of each tortilla with mayonnaise, if desired.
  3. Take a quarter of the ground beef and place it on one half of each tortilla. Season generously with salt, pepper, and garlic powder.
  4. With the beef side facing down, carefully place the tortilla onto the hot skillet. Cook for 2-3 minutes until the underside is browned.
  5. Flip the quesadilla, sprinkle cheese on top of the beef, fold, and cook for another 1-2 minutes until the cheese melts.
  6. Remove the quesadilla from the skillet and let it cool for 1-2 minutes. Slice into triangles.
