  1. Begin by unwrapping an 8-ounce block of cream cheese and placing it in the freezer for about 10 minutes.
  2. Once firm, remove the cream cheese from the freezer and coat it generously with your chosen dry rub.
  3. Create shallow slits in the top of the cream cheese block for better presentation and easy dipping.
  4. Preheat your smoker to 200°F and place the cream cheese block directly onto the grill grates. Smoke for about 1 hour.
  5. Remove from smoker, allow to cool slightly, and serve with crackers, fresh vegetables, or tortilla chips.
