  1. In a mixing bowl, combine warm water, active dry yeast, and sugar. Allow this mixture to sit for about 5 minutes until frothy.
  2. Whisk together all-purpose flour and salt in a large bowl. Gradually pour in the yeast mixture, stirring until a shaggy dough forms.
  3. Knead the dough on a floured surface for about 5 to 7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.
  4. Preheat your oven to 450°F (230°C) and prepare baking sheets with parchment paper.
  5. In a pot, bring 10 cups of water to a boil and stir in baking soda to create the pretzel bath.
  6. Punch down the risen dough, divide it into 8 equal pieces, and roll each into a long rope about 12-14 inches long.
  7. Wrap a slice of cheddar around each hot dog, then wrap the dough rope around the cheese-filled hot dog.
  8. Gently place each wrapped pretzel dog into the boiling baking soda solution for 30 seconds on each side.
  9. Arrange the boiled pretzel dogs on the baking sheets, brush with beaten egg, and sprinkle coarse salt on top.
  10. Bake for 12 to 15 minutes until deep golden brown. Let cool slightly before serving.
