  • 1 teaspoon Vanilla Extract

  • 1/2 cup Organic Brown Sugar or coconut sugar
  • 1/2 cup Pure Maple Syrup
  • 1/4 teaspoon Ground Allspice optional
  • 1/2 cup Organic Raisins soaked for texture
  • 2 cups Marshmallows divided
  • 1 cup Raw Pecans
For the Topping
  • 2 tablespoons Maple Syrup drizzled
  • 1/2 cup Additional Pecans

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, cinnamon, and nutmeg. Spread on a baking sheet and roast for 50-60 minutes.
  2. After roasting, reduce the oven temperature to 375°F (190°C). Mash the sweet potatoes and mix in almond milk, vanilla, brown sugar, maple syrup, raisins, half the marshmallows, and spices.
  3. Grease a 9x13 baking dish. Pour in the sweet potato mixture and top with cubes of butter and the remaining marshmallows.
  4. In a small bowl, mix pecans with maple syrup. Sprinkle over the casserole evenly.
  5. Cover with foil and bake for 15 minutes. Remove foil and bake for an additional 15 minutes until pecans are golden.
