- Preheat your oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, cinnamon, and nutmeg. Spread on a baking sheet and roast for 50-60 minutes.
- After roasting, reduce the oven temperature to 375°F (190°C). Mash the sweet potatoes and mix in almond milk, vanilla, brown sugar, maple syrup, raisins, half the marshmallows, and spices.
- Grease a 9x13 baking dish. Pour in the sweet potato mixture and top with cubes of butter and the remaining marshmallows.
- In a small bowl, mix pecans with maple syrup. Sprinkle over the casserole evenly.
- Cover with foil and bake for 15 minutes. Remove foil and bake for an additional 15 minutes until pecans are golden.
