- Begin by cutting chicken thighs into bite-sized strips and tossing them with cornstarch, salt and pepper in a bowl until coated.
- In a large skillet, heat vegetable oil over medium-high heat and add the chicken strips in a single layer. Cook for 5-7 minutes until golden brown.
- In the same skillet, reduce heat and sauté minced garlic for about 30 seconds, then stir in soy sauce, brown sugar, honey, and sesame oil. Let simmer for 2-3 minutes until thickened.
- Prepare your noodles according to package directions. Reserve a little pasta water, then drain the noodles.
- Return the cooked chicken to the skillet, add the drained noodles, and toss together until well-coated.
- Serve immediately, garnished with sliced green onions and red pepper flakes.
