Method
 

Preparation
  1. In a small bowl, whisk together honey, lime juice, minced garlic, lime zest, soy sauce, ground cumin, and smoked paprika. Season with salt and pepper to taste.
  2. Place chicken thighs in a resealable bag and pour the marinade over them, ensuring each piece is coated. Refrigerate for at least 30 minutes.
  3. Preheat oven to 400°F (200°C).
  4. In an ovenproof skillet, heat oil over medium-high heat. Sear chicken thighs skin-side down for 5-7 minutes until golden brown.
  5. Turn chicken thighs over, pour reserved marinade over them, and transfer skillet to the oven. Bake for 25-30 minutes until chicken reaches 165°F (74°C).
  6. Remove from oven and let rest for 5 minutes before serving.
