  • 1/2 cup Cornmeal opt for fine or medium ground cornmeal
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Garlic Powder fresh minced garlic gives an even bolder punch

Method
 

Directions
  1. Begin by preheating your oven to 350°F (175°C).
  2. In a large mixing bowl, mix together the fresh corn, creamed corn, sour cream, shredded cheddar cheese, honey, and melted butter until well combined.
  3. In a separate bowl, whisk together the cornmeal, baking powder, salt, black pepper, and garlic powder.
  4. Gradually add the dry mixture into the wet ingredients, stirring gently until just combined.
  5. Lightly grease a 9x13-inch baking dish with cooking spray or butter. Pour the corn mixture into the dish and spread it evenly.
  6. Place the prepared casserole in the preheated oven and bake for 35-40 minutes. Check for doneness with a toothpick.
  7. Once baked, let the casserole cool for a few minutes before serving. Top with chopped chives or parsley if desired.
