Step-by-Step Instructions for Taco Rice Bowl
  1. Begin by rinsing the rice under cold water to remove excess starch. In a medium saucepan, combine the rinsed rice with water or chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  2. In a large skillet, heat olive oil over medium-high heat. Add ground beef or turkey, breaking apart while cooking. Season with salt, pepper, and taco seasoning.
  3. Add drained black beans and corn to the skillet, stirring gently. Heat mixture over low heat for about 2–3 minutes.
  4. Gather bowls and layer cooked rice at the bottom, spoon taco mixture over rice, and top with diced tomatoes.
  5. Layer shredded lettuce and cheese over the bowl, and add more veggies if desired.
