Ingredients
  

For the Marinade
  • 1 cup Plain Yogurt substitute with Greek yogurt for thicker consistency
  • 3 cloves Garlic minced or fresh
  • 1 tablespoon Ginger fresh, minced
  • 2 tablespoons Lemon Juice lime juice can be a substitute
  • 1 teaspoon Hot Paprika use regular paprika for less spice
  • 1 teaspoon Cumin ground coriander can be an alternative
  • 1 teaspoon Garam Masala can be homemade or store-bought
  • 1/2 teaspoon Cayenne Pepper adjust to taste or omit
For the Pizza
  • 1 pound Boneless Skinless Chicken Thighs chicken breasts may be used for a leaner option
  • 4 pieces Naan Bread store-bought or homemade
  • 1 cup Mozzarella Cheese can substitute with provolone or feta
For the Toppings
  • 1 cup Mango alternatives include peach or pineapple
  • 1 small Red Onion soaking in cold water can mellow its flavor
  • 1/4 cup Fresh Mint for garnish
  • 1/4 cup Fresh Cilantro for garnish

Method
 

Preparation
  1. In a medium bowl, blend together plain yogurt, minced garlic, fresh ginger, lemon juice, hot paprika, cumin, garam masala, and cayenne pepper until well-combined.
  2. Coat the boneless skinless chicken thighs thoroughly with half of the prepared marinade and refrigerate for at least 30 minutes.
  3. Mix the remaining marinade with a few tablespoons of tomato paste to create pizza sauce.
  4. Cook marinated chicken on a grill or skillet for 6-7 minutes per side until charred and cooked through.
  5. Spread a layer of sauce over naan, top with grilled chicken, mango, red onion, and mozzarella cheese.
  6. Grill or bake at 400°F for about 5-7 minutes until cheese is melted and naan is crispy.
  7. Garnish with fresh mint and cilantro before serving.
