Ingredients
  

For the Pork Belly
  • 1 kg Pork Belly nicely marbled slab
  • 1 medium Yellow Onion finely chopped
  • 1 inch Ginger fresh, minced
  • 4 cloves Garlic fresh, minced
  • 1 tbsp Chinese Five Spice Powder
  • 1 cup Beer (Lager/Light) or beef broth
  • 2 cups Beef Broth
  • 1/4 cup Soy Sauce or tamari
  • 1/4 cup Rice Vinegar or apple cider vinegar
  • 1 tbsp Granulated Sugar or brown sugar
For the Slaw
  • 2 cups Shredded Cabbage and Carrot mix colors for visual appeal
  • 2 each Scallions and Jalapeño chopped
  • 1/4 cup Cilantro optional
  • 2 tbsp Sesame Oil or neutral oil
  • 1 tbsp Honey or maple syrup
  • 1 tbsp Sesame Seeds for garnish
For Assembling
  • 6 each Slider Buns gluten-free options available

Step-by-Step Instructions
  1. Heat a large braising pot over medium-high heat. Add the pork belly, searing it on all sides until beautifully browned, about 3-4 minutes per side.
  2. Once the pork belly is browned, add yellow onion, minced ginger, and garlic, along with Chinese five spice powder. Stir for about 2-3 minutes until onions soften.
  3. Pour in the beer, beef broth, soy sauce, rice vinegar, and sugar into the pot. Bring to a gentle boil over high heat, then reduce to low, cover, and simmer for 45 minutes.
  4. After 45 minutes, skim off excess fat from the surface of the braising liquid. Continue cooking until the pork belly becomes fork-tender, about another 30-45 minutes.
  5. Once tender, remove the lid and increase heat to medium-high. Let the liquid simmer vigorously, reducing it to a sticky sauce consistency.
  6. In a separate bowl, whisk together sesame oil, rice vinegar, honey, and sesame seeds. Toss in cabbage, carrots, scallions, and jalapeño.
  7. If desired, toast the slider buns. Place a generous portion of the braised pork belly on each bun, drizzle with sauce, and top with the slaw.
  8. Secure the top bun on each slider and serve warm.
