Preparation
- In a bowl, combine the marinade ingredients: olive oil, tequila, lime juice, cumin, granulated garlic, chili powder, salt, black pepper, and cilantro.
- Place the chicken breasts in a Ziploc bag and pour the marinade over them. Seal the bag tightly and massage to coat the chicken well. Refrigerate for at least 30 minutes.
- Preheat the cast iron grill pan over medium-high heat for about 5 minutes.
- Remove the chicken from the marinade and discard excess marinade. Sear the chicken in the hot grill pan for 4-5 minutes on each side until charred and golden brown.
- Transfer the grill pan to a preheated oven at 350°F and bake for an additional 15 minutes.
- Check the internal temperature of the chicken using a meat thermometer to ensure it reaches at least 165°F. Let the chicken rest for 5 minutes before slicing.
