Method
 

Preparation
  1. In a bowl, combine the marinade ingredients: olive oil, tequila, lime juice, cumin, granulated garlic, chili powder, salt, black pepper, and cilantro.
  2. Place the chicken breasts in a Ziploc bag and pour the marinade over them. Seal the bag tightly and massage to coat the chicken well. Refrigerate for at least 30 minutes.
  3. Preheat the cast iron grill pan over medium-high heat for about 5 minutes.
  4. Remove the chicken from the marinade and discard excess marinade. Sear the chicken in the hot grill pan for 4-5 minutes on each side until charred and golden brown.
  5. Transfer the grill pan to a preheated oven at 350°F and bake for an additional 15 minutes.
  6. Check the internal temperature of the chicken using a meat thermometer to ensure it reaches at least 165°F. Let the chicken rest for 5 minutes before slicing.
