- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Beat the butter and sugar in a large bowl until light and fluffy.
- Add the egg, egg yolk, vanilla extract, vinegar, and food coloring, mixing well.
- Incorporate the dry mixture into the wet ingredients until just combined.
- If too soft, chill the dough for 30-60 minutes. Roll dough into balls and coat in sugar.
- Place the dough balls on the baking sheets and bake for 10-12 minutes.
- Press a Hershey's Kiss into the center of each cookie immediately after baking.
- Allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
