Preparing the Cuban Bread
- Activate the yeast by dissolving 1 tablespoon of sugar in 1 cup of warm water. Combine with 4 cups of bread flour and 1 tablespoon of salt.
- Add 2 tablespoons of lard and knead the dough for about 10 minutes. Let it rise for 1 hour.
- Shape the dough into loaves and let it rise for another 45 minutes before baking.
- Brush with egg white and bake at 375°F for 20-25 minutes until golden brown.
Cooking the Pork
- Marinate pork shoulder with garlic, cumin, oregano, citrus juices, salt, and pepper. Rub all over the pork.
- Cook on low for 8 hours or at 300°F for approximately 3 hours.
- Shred the pork and retain some cooking juices.
Assembling the Sandwich
- Slice the Cuban bread and spread mustard on both sides.
- Layer ham, shredded pork, Swiss cheese, and dill pickles.
- Butter the outer sides of the sandwich before grilling.
- Grill in a skillet for 4-5 minutes on each side until golden brown.
- Slice diagonally and serve warm.
