  • 1 packet Taco Seasoning Mix Adjust water according to package
  • 1 can Black Beans Rinsed and drained
  • 1 can Diced Tomatoes with Green Chilies
  • 1 cup Frozen Corn Can use fresh corn
  • 2 cups Fritos Original or chili cheese
For the Toppings
  • 2 cups Shredded Mexican Blend Cheese Can substitute with cheddar or Monterey Jack
  • Optional Toppings Lettuce, tomatoes, olives, sour cream, jalapeños, avocado, or cilantro

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet, brown the ground beef over medium heat, for 5-7 minutes.
  3. Add the taco seasoning mix and the recommended amount of water; simmer for 2-3 minutes.
  4. Stir in black beans, diced tomatoes, and corn, mixing until heated through.
  5. Layer half of the Fritos in the baking dish, followed by the beef mixture and cheese.
  6. Bake for 15-20 minutes or until the cheese is bubbling and golden.
  7. Sprinkle remaining Fritos on top and serve with optional toppings.
