Step-by-Step Instructions
  1. Start by grilling 2 cups of fresh corn on the cob over medium-high heat for about 10-15 minutes. Turn the cobs occasionally until they are nicely charred and have a smoky aroma.
  2. In a large mixing bowl, combine 1 cup of cooked pinto beans, 1/2 cup of diced red onion, and 1/2 cup of halved cherry tomatoes, along with 1/4 cup of chopped cilantro. Stir gently to mix the ingredients thoroughly.
  3. Once the grilled corn has cooled slightly, carefully slice the kernels off the cobs and add them to the salad mix. Gently fold the corn into the pinto bean mixture.
  4. In a small bowl, whisk together 2 tablespoons of fresh lime juice, 1 tablespoon of mayonnaise, 1 teaspoon of chili powder, and a pinch of salt and pepper until smooth.
  5. Pour the dressing over the salad mixture and use a large spoon to toss everything gently, ensuring all ingredients are coated.
