Step-by-Step Instructions for Greek Lemon Chicken
  1. In a mixing bowl, combine the olive oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard, kosher salt, and black pepper. Whisk the ingredients together until well blended.
  2. Place the chicken thighs in a large bowl or resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is coated. Allow to marinate for at least 1 hour at room temperature or refrigerate for up to 8 hours.
  3. Preheat your oven to 350°F (180°C). Transfer the marinated chicken thighs to a baking dish, arranging them skin-side up.
  4. Bake the chicken for 40-45 minutes, or until golden brown and crisp. Use an instant-read thermometer to check for doneness at 175°F (80°C). If desired, broil for an additional 2-3 minutes.
