- Preheat your oven to 375°F (190°C). Gather your ingredients and tools.
- Finely chop onion and parsley, mince garlic, zest, and juice the lemon.
- In a large bowl, combine ground beef, breadcrumbs, egg, parsley, garlic, onion, half of the lemon zest, oregano, salt, and pepper. Mix thoroughly.
- Wet your hands slightly, shape the meat mixture into small meatballs about 1½ inches in diameter, and place them on a baking sheet.
- Heat olive oil in a skillet, brown meatballs for about 2-3 minutes on each side until golden.
- Reduce heat, add chicken broth, remaining lemon zest, and juice, stirring gently. Simmer for about 2 minutes.
- Return browned meatballs to the skillet and simmer gently for about 15 minutes until fully cooked (165°F internally).
- Adjust the seasoning of the lemon sauce to taste, adding more lemon juice/zest if desired.
- Garnish with fresh parsley and serve warm with rice, pasta, or salad.
