Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and tools.
  2. Finely chop onion and parsley, mince garlic, zest, and juice the lemon.
  3. In a large bowl, combine ground beef, breadcrumbs, egg, parsley, garlic, onion, half of the lemon zest, oregano, salt, and pepper. Mix thoroughly.
  4. Wet your hands slightly, shape the meat mixture into small meatballs about 1½ inches in diameter, and place them on a baking sheet.
  5. Heat olive oil in a skillet, brown meatballs for about 2-3 minutes on each side until golden.
  6. Reduce heat, add chicken broth, remaining lemon zest, and juice, stirring gently. Simmer for about 2 minutes.
  7. Return browned meatballs to the skillet and simmer gently for about 15 minutes until fully cooked (165°F internally).
  8. Adjust the seasoning of the lemon sauce to taste, adding more lemon juice/zest if desired.
  9. Garnish with fresh parsley and serve warm with rice, pasta, or salad.
