Method
 

Preparation
  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, ground cumin, and salt and black pepper to taste.
  2. Cut chicken breasts into 1-inch cubes and add to the marinade. Stir well and cover, marinating for at least 30 minutes.
  3. Soak wooden skewers in water for 20-30 minutes if using, or use metal skewers directly. Thread marinated chicken onto skewers.
  4. Preheat grill or grill pan to medium-high heat, about 400°F, greasing grates lightly.
  5. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken reaches 165°F internal temperature.
  6. While grilling, prepare the mezze tray by arranging hummus, tzatziki, olives, cherry tomatoes, cucumber slices, and feta cheese on a platter.
  7. Serve grilled skewers hot alongside the mezze tray.
